Ingredients
| 500g | Fresh Cockles |
| 200ml | Dry White Wine |
| 20g | Dried Wakame Seaweed |
| 1 tsp | Fresh Grated Ginger |
| 1 | Lemon |

Preparation
- Leave the cockles in cold, salted water for 1 hour to purge them. Drain and rehydrate the wakame seaweed in cold water for 10 minutes.

In a large pot, sauté the sliced garlic for 1 minute. Add the white wine, ginger, and bring to a boil. Add the cockles, cover, and cook over high heat for 3-4 minutes until they all open.
