Ingredients
| 200g | Peeled prawns |
| 200g | Wild asparagus |
| 80g | Rocket |
| 1 tbsp | Dijon mustard |
| 2 tbsp | EVOO olive oil |
| 1 tbsp | Apple cider vinegar |
| To taste | Lemon and black pepper |
Preparation
- Prepare the vinaigrette: whisk the mustard, vinegar, and oil until emulsified. Add salt and pepper. Set aside.

Cut the asparagus into 4cm pieces. Sauté over high heat in a pan with a few drops of oil for 3-4 minutes until golden but still firm. Remove and set aside.

In the same pan, cook the prawns for 1-2 minutes per side until they change color. Arrange the rocket on a large plate, place the asparagus and hot prawns on top. Dress with the vinaigrette.
