Ingredients

200g Peeled prawns
200g Wild asparagus
80g Rocket
1 tbsp Dijon mustard
2 tbsp EVOO olive oil
1 tbsp Apple cider vinegar
To taste Lemon and black pepper

Preparation

  1. Prepare the vinaigrette: whisk the mustard, vinegar, and oil until emulsified. Add salt and pepper. Set aside.
  2. Cut the asparagus into 4cm pieces. Sauté over high heat in a pan with a few drops of oil for 3-4 minutes until golden but still firm. Remove and set aside.

  3. In the same pan, cook the prawns for 1-2 minutes per side until they change color. Arrange the rocket on a large plate, place the asparagus and hot prawns on top. Dress with the vinaigrette.
