Ingredients

300g Cooked beetroot
200g Ripe tomato
½ Cucumber
1 clove Garlic
2 tbsp Olive oil
1 tbsp Sherry vinegar
100g Crumbled fresh cheese
20g Sunflower seeds

Preparation

  1. Place the beetroot, tomato, ½ peeled cucumber, garlic, oil, and vinegar in the blender. Add 150ml of cold water and salt.
  2. Blend for 60 seconds at maximum power. Taste and adjust acidity with more vinegar and salt. Refrigerate for at least 30 minutes.

  3. Serve in small glasses or deep bowls. Garnish with the remaining cucumber diced, crumbled fresh cheese, sunflower seeds, and a drizzle of oil.
