Ingredients
| 300g | Cooked beetroot |
| 200g | Ripe tomato |
| ½ | Cucumber |
| 1 clove | Garlic |
| 2 tbsp | Olive oil |
| 1 tbsp | Sherry vinegar |
| 100g | Crumbled fresh cheese |
| 20g | Sunflower seeds |
Preparation
- Place the beetroot, tomato, ½ peeled cucumber, garlic, oil, and vinegar in the blender. Add 150ml of cold water and salt.

Blend for 60 seconds at maximum power. Taste and adjust acidity with more vinegar and salt. Refrigerate for at least 30 minutes.

Serve in small glasses or deep bowls. Garnish with the remaining cucumber diced, crumbled fresh cheese, sunflower seeds, and a drizzle of oil.
