Ingredients
| 1 (400g) | Whole sea bass |
| 1 kg | Coarse salt |
| 1 | Fennel bulb |
| 1 | Orange |
| 40g | Pitted black olives |
| 2 tbsp | EVOO olive oil |
| To taste | Fresh dill |
Preparation

Cover the bottom of a baking dish with half of the coarse salt. Place the whole sea bass on top and cover it completely with the remaining salt. Bake at 200°C for 20-25 minutes.
- While baking, finely slice the fennel with a mandoline or knife. Peel the orange "à vif" (removing all white pith) and cut into segments. Dress with oil and salt.

Break the salt crust at the table, remove the fish skin and serve the fillets over the fennel and orange salad. Finish with fresh dill and a drizzle of oil.
