Greek Tuna Salad with Chickpeas and Lemon Vinaigrette

Ingredients

2 cans Tuna in water (160g)
200g Cooked chickpeas
100g Cucumber
150g Cherry tomatoes
50g Light feta cheese
40g Black olives
2 tbsp Extra virgin olive oil
1 Lemon (juice and zest)

Preparation

  1. Wash and cut the cucumber into half-moons and the cherry tomatoes in half. Drain the tuna and chickpeas well.

  2. Prepare the vinaigrette by mixing the lemon juice and zest with the oil, salt, oregano, and black pepper.

  3. Combine all ingredients in a large bowl. Add the crumbled feta and olives. Dress just before serving.
