Ingredients
| 200g | Chicken breast |
| 200ml | Light coconut milk |
| 1 tbsp | Red curry paste |
| ½ head | Cauliflower |
| 100g | Baby spinach |
| 1 | Red onion |
| 1 tsp | Turmeric powder |
| To taste | Fresh cilantro and lime |
Preparation
- Cut the chicken into 3cm cubes. Sauté the onion in olive oil for 3 minutes. Add the curry paste and turmeric, sauté for 1 more minute until fragrant.

Add the chicken and sear for 3 minutes. Pour in the coconut milk, lower the heat, and cook for 12 minutes. Stir in the spinach during the last minute.
