Ingredients

200g Chicken breast
200ml Light coconut milk
1 tbsp Red curry paste
½ head Cauliflower
100g Baby spinach
1 Red onion
1 tsp Turmeric powder
To taste Fresh cilantro and lime

Preparation

  1. Cut the chicken into 3cm cubes. Sauté the onion in olive oil for 3 minutes. Add the curry paste and turmeric, sauté for 1 more minute until fragrant.
  2. Add the chicken and sear for 3 minutes. Pour in the coconut milk, lower the heat, and cook for 12 minutes. Stir in the spinach during the last minute.
