Ingredients
| 5 | Egg whites |
| 2 | Whole eggs |
| 120g | Baby spinach |
| 150g | Portobello mushrooms |
| 40g | Fresh goat cheese |
| 1 clove | Garlic |
| To taste | Fresh thyme |
Preparation

Slice the mushrooms and sauté them over high heat with garlic until they release their water and brown well. Add the spinach and sauté for 1 minute. Set aside the filling.
- Whisk the egg whites and whole eggs with salt, pepper, and thyme. Pour into a 24cm non-stick pan over medium-low heat. When the edges set, add the filling to one half.

Crumble the goat cheese over the filling. Fold the omelet with a spatula and cook for 1 more minute. The inside should be slightly moist and the cheese semi-melted.
